This gas, when released into cream, interacts with the cream's fats, gelatins, and stabilizers, creating a light, fluffy foam known as whipped cream. While nitrous oxide is a naturally occurring component of the Earth's atmosphere and plays a role in traditional manual whipping of cream, cream chargers simplify and expedite this process by directly injecting N2O into the cream.
The standard cream charger is a small, steel cylinder, approximately 2.5 inches long and 0.7 inches in diameter, making it easy to handle and store.
